Ingredients

  • 1 large eggplant
  • 3 garlic cloves, minced
  • 2 scallions, chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 2 tablespoons oil for frying

Directions
