Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/2 cup packed light brown sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1/2 cup chopped dried cherries
- 3 cups cornflakes, coarsely crushed
Directions
- Preheat oven to 350°F.
- In a medium bowl, whisk together flour, baking soda and salt; set aside.
- In a large bowl, beat butter, sugars and vanilla until light and fluffy.
- Beat in egg until combined.
- Gradually add in flour mixture and mix until just combined.
- Stir in cherries and cornflakes until evenly distributed.
- Drop dough by rounded tablespoons onto parchment-lined baking sheets.
- Bake for 12-14 minutes or until golden brown.
