Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 jalapenos, seeded and diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 2 cups chicken broth
  • 2 cups corn kernels
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can fire-roasted diced tomatoes
  • 1 (4-ounce) can diced green chiles
  • 1 pound chicken breasts, cooked and shredded
  • Salt and pepper to taste
  • Optional garnishes: sour cream, shredded cheese, diced avocado, cilantro, and jalapenos

Directions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion, garlic, and jalapenos and cook until the vegetables are softened, about 5 minutes.
  3. Add the cumin, chili powder, and smoked paprika and cook for another minute.
  4. Pour in the chicken broth, corn kernels, black beans, diced tomatoes, and diced green chiles.
  5. Bring to a boil, reduce heat, and simmer for 30 minutes.
  6. Stir in the cooked chicken and season with salt and pepper to taste.
  7. Serve with desired garnishes.
