Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 jalapenos, seeded and diced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 2 cups chicken broth
- 2 cups corn kernels
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can fire-roasted diced tomatoes
- 1 (4-ounce) can diced green chiles
- 1 pound chicken breasts, cooked and shredded
- Salt and pepper to taste
- Optional garnishes: sour cream, shredded cheese, diced avocado, cilantro, and jalapenos
Directions
- Heat olive oil in a large pot over medium heat.
- Add the onion, garlic, and jalapenos and cook until the vegetables are softened, about 5 minutes.
- Add the cumin, chili powder, and smoked paprika and cook for another minute.
- Pour in the chicken broth, corn kernels, black beans, diced tomatoes, and diced green chiles.
- Bring to a boil, reduce heat, and simmer for 30 minutes.
- Stir in the cooked chicken and season with salt and pepper to taste.
- Serve with desired garnishes.
