Ingredients

  • 2 lbs ground beef
  • 1/2 cup onion, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup jalapeno, diced
  • 1/2 cup bread crumbs
  • 1/2 cup cornbread mix
  • 2 eggs
  • 1/4 cup ketchup
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper

Directions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together the ground beef, onion, bell pepper, jalapeno, bread crumbs, cornbread mix, eggs, ketchup, Worcestershire sauce, Italian seasoning, garlic powder, onion powder and black pepper until well combined.
  3. Form the mixture into a loaf shape and place in a baking dish.
  4. Bake in preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 160°F (70°C).
  5. Let the meatloaf rest for 10 minutes before slicing and serving.
