Ingredients
1 package of your favorite pasta
2 tablespoons of olive oil
1 onion, chopped
2 cloves of garlic, minced
2 carrots, diced
1 red pepper, diced
1 zucchini, sliced
1 cup of frozen peas
1 tablespoon of fresh basil, chopped
1 tablespoon of fresh parsley, chopped
1 teaspoon of oregano
Salt and pepper, to taste
Directions
Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and cook for a few minutes.
Add the carrots, red pepper, and zucchini and cook for about 5 minutes, stirring occasionally.
Add the peas, basil, parsley, oregano, and season with salt and pepper.
Reduce the heat to low and simmer for about 5 minutes.
Drain the pasta and add it to the skillet with the vegetables. Stir until all the ingredients are combined.
Serve with a sprinkle of Parmesan cheese, if desired.
