Ingredients

  • 1 package of your favorite pasta
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 carrots, diced
  • 1 red pepper, diced
  • 1 zucchini, sliced
  • 1 cup of frozen peas
  • 1 tablespoon of fresh basil, chopped
  • 1 tablespoon of fresh parsley, chopped
  • 1 teaspoon of oregano
  • Salt and pepper, to taste

Directions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
  2. Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and cook for a few minutes.
  3. Add the carrots, red pepper, and zucchini and cook for about 5 minutes, stirring occasionally.
  4. Add the peas, basil, parsley, oregano, and season with salt and pepper.
  5. Reduce the heat to low and simmer for about 5 minutes.
  6. Drain the pasta and add it to the skillet with the vegetables. Stir until all the ingredients are combined.
  7. Serve with a sprinkle of Parmesan cheese, if desired.
