Ingredients
- 1 package of your favorite pasta
- 2 tablespoons of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 carrots, diced
- 1 red pepper, diced
- 1 zucchini, sliced
- 1 cup of frozen peas
- 1 tablespoon of fresh basil, chopped
- 1 tablespoon of fresh parsley, chopped
- 1 teaspoon of oregano
- Salt and pepper, to taste
Directions
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
- Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and cook for a few minutes.
- Add the carrots, red pepper, and zucchini and cook for about 5 minutes, stirring occasionally.
- Add the peas, basil, parsley, oregano, and season with salt and pepper.
- Reduce the heat to low and simmer for about 5 minutes.
- Drain the pasta and add it to the skillet with the vegetables. Stir until all the ingredients are combined.
- Serve with a sprinkle of Parmesan cheese, if desired.
