  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 2 tablespoons unsalted butter
  • 1 teaspoon grated lemon zest


  1. In a medium saucepan, whisk together the sugar, cornstarch and salt.
  2. Whisk in the eggs until smooth.
  3. Whisk in the lemon juice and butter.
  4. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  5. Remove from the heat and stir in the lemon zest.
  6. Pour the curd into a bowl and let cool to room temperature before serving.
