Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 eggs, lightly beaten
  • 3/4 cup milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large apples, peeled, cored, and diced
  • Vegetable oil for frying
  • 1/2 cup confectioners' sugar for dusting

Directions

  1. In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
  2. In a separate bowl, whisk together the eggs, milk, sugar, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Fold in the diced apples.
  5. Heat the oil in a large skillet or Dutch oven over medium-high heat.
  6. Drop the batter by the tablespoonful into the hot oil and fry until golden brown on both sides, about 2 minutes on each side.
  7. Remove the fritters from the oil and drain on paper towels.
  8. Dust with the confectioners' sugar and serve warm.
