Ingredients
- 2 cups diced butternut squash
- 2 cups diced carrots
- 2 cups diced parsnips
- 2 cups diced Brussels sprouts
- 1 onion, diced
- 3 cloves garlic, minced
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 cups milk
- 2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- Salt and pepper to taste
Directions
- Preheat the oven to 375°F and grease a baking dish.
- In a large skillet, melt the butter over medium heat. Add the diced vegetables, onion, and garlic, and sauté until the vegetables are tender.
- Sprinkle the flour over the vegetables and cook for 1-2 minutes, stirring constantly.
- Gradually add the milk, stirring constantly, until the sauce thickens. Remove from heat and stir in the cheddar cheese until melted.
- Pour the cheese sauce over the vegetables in the baking dish and sprinkle with Parmesan cheese and breadcrumbs.
