Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 clove garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (10 oz) can diced tomatoes with green chilies, undrained
  • 1 (1 oz) package taco seasoning
  • 1 (8 oz) package cream cheese, softened
  • 2 cups shredded Mexican cheese blend, divided
  • Tortilla chips, for serving

Directions

  1. Preheat oven to 350°F. Grease a 9-inch pie plate or round baking dish.
  2. In a large skillet over medium-high heat, cook the ground beef, onion, bell pepper, and garlic until the beef is browned and the vegetables are softened, about 8 minutes.
  3. Stir in the black beans, diced tomatoes with green chilies, and taco seasoning. Cook until heated through, about 5 minutes.
  4. Remove from heat and stir in the cream cheese and 1 cup of the shredded cheese. Spoon the mixture into the prepared baking dish.
  5. Top with the remaining 1 cup of cheese. Bake for 20 minutes, or until the cheese is melted and bubbly.
  6. Serve warm with tortilla chips.
