Ingredients

  • 8 ounces vegetarian soy sausage, crumbled
  • 1 teaspoon olive oil
  • 1 small onion, diced
  • 1 tablespoon minced garlic
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 4 cups baby spinach leaves
  • 6 eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 6 slices Italian bread, cubed
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese

Directions

  1. Preheat oven to 375°F.
  2. Heat olive oil in a large skillet over medium-high heat. Add the crumbled soy sausage and cook until lightly browned, about 3-4 minutes. Add the onion, garlic, oregano, and red pepper flakes and cook until the onion is softened, about 3 minutes. Add the spinach and cook until wilted, about 1 minute.
  3. In a large bowl, whisk together the eggs, milk, salt, and pepper. Add the bread cubes and stir to combine. Add the cooked sausage mixture and stir until everything is evenly combined.
  4. Pour the mixture into a greased 9-inch square baking dish. Sprinkle the Parmesan and mozzarella cheese on top. Bake for 25-30 minutes, or until the top is golden brown and the center is set.
