Ingredients
- 1 tablespoon butter
- 1 cup chopped onion
- 2 cloves garlic, minced
- 2 cups chicken broth
- 3 cups fresh asparagus, chopped
- 1 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon ground black pepper
Directions
- In a large pot, melt the butter over medium heat. Add the onion and garlic and cook for 3 minutes, stirring occasionally.
- Add the chicken broth and asparagus and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
- Stir in the cream, cheese, oregano, basil, and pepper. Simmer for 5 minutes, stirring occasionally.
- Remove the soup from the heat and let cool slightly. Blend the soup in a blender until smooth.
- Return the soup to the pot and warm over low heat until heated through. Serve hot.
