Ingredients

  • 1 package rice noodles
  • 1 can coconut milk
  • 1 cup vegetables of your choice (such as bell pepper, onion, broccoli, etc)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon chili powder
  • 1 teaspoon sea salt
  • 1 tablespoon coconut oil
  • 1/4 cup cilantro, chopped

Directions

  1. Bring a large pot of water to a boil and cook the rice noodles according to package instructions.
  2. In a large skillet, heat the coconut oil over medium heat. Add the vegetables and garlic and cook for 5 minutes, stirring occasionally.
  3. Add the ginger, turmeric, cumin, coriander, chili powder, and salt and stir to combine.
  4. Stir in the coconut milk and bring to a simmer. Simmer for 5 minutes.
  5. Add the cooked noodles to the skillet and stir to combine. Simmer for 3-5 minutes, or until the noodles are cooked.
  6. Garnish with chopped cilantro and serve.
