Ingredients
- 1 package rice noodles
- 1 can coconut milk
- 1 cup vegetables of your choice (such as bell pepper, onion, broccoli, etc)
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon chili powder
- 1 teaspoon sea salt
- 1 tablespoon coconut oil
- 1/4 cup cilantro, chopped
Directions
- Bring a large pot of water to a boil and cook the rice noodles according to package instructions.
- In a large skillet, heat the coconut oil over medium heat. Add the vegetables and garlic and cook for 5 minutes, stirring occasionally.
- Add the ginger, turmeric, cumin, coriander, chili powder, and salt and stir to combine.
- Stir in the coconut milk and bring to a simmer. Simmer for 5 minutes.
- Add the cooked noodles to the skillet and stir to combine. Simmer for 3-5 minutes, or until the noodles are cooked.
- Garnish with chopped cilantro and serve.
