Ingredients
1 package rice noodles
1 can coconut milk
1 cup vegetables of your choice (such as bell pepper, onion, broccoli, etc)
2 cloves garlic, minced
1 teaspoon fresh ginger, minced
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon chili powder
1 teaspoon sea salt
1 tablespoon coconut oil
1/4 cup cilantro, chopped
Directions
Bring a large pot of water to a boil and cook the rice noodles according to package instructions.
In a large skillet, heat the coconut oil over medium heat. Add the vegetables and garlic and cook for 5 minutes, stirring occasionally.
Add the ginger, turmeric, cumin, coriander, chili powder, and salt and stir to combine.
Stir in the coconut milk and bring to a simmer. Simmer for 5 minutes.
Add the cooked noodles to the skillet and stir to combine. Simmer for 3-5 minutes, or until the noodles are cooked.
Garnish with chopped cilantro and serve.
