Ingredients

  • 2 tablespoons olive oil
  • 2 pounds lamb stew meat, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 cups chicken or beef broth
  • 2 large potatoes, peeled and cut into 1-inch cubes
  • 1/4 cup chopped fresh cilantro
    • Directions

      1. Heat olive oil in a large Dutch oven over medium heat.
      2. Add the cubed lamb stew meat and cook for 5 minutes, stirring occasionally.
      3. Add the chopped onion and garlic and cook for an additional 5 minutes, stirring occasionally.
      4. Stir in the cumin, coriander, turmeric, oregano, paprika, salt, and pepper and cook for 1 minute.
      5. Add the chicken or beef broth and bring to a boil.
      6. Reduce heat to low, cover, and simmer for 45 minutes.
      7. Add the potatoes and simmer for an additional 30 minutes, or until the potatoes and lamb are cooked through.
      8. Stir in the cilantro and cook for 1 minute.
      9. Serve with fresh crusty bread and enjoy!
