Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup champagne
  • 2 tablespoons champagne
  • 1/2 cup powdered sugar

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually stir the dry ingredients into the creamed mixture.
  5. Stir in the champagne until just combined. The batter should be thick and slightly sticky.
  6. Drop the cookie dough onto a greased or parchment-lined baking sheet in rounded spoonfuls.
  7. Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  8. In a small bowl, whisk together the remaining 2 tablespoons of champagne and the powdered sugar until a thick glaze is formed. Drizzle over the cooled cookies.
