Ingredients

  • 2 apples, diced
  • 1/2 cup celery, diced
  • 1/4 cup dried cranberries
  • 1/2 cup plain Greek yogurt
  • 1/4 cup walnuts, chopped
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground cinnamon
  • Salt and pepper, to taste

Directions

  1. In a large bowl, combine the apples, celery, and cranberries.
  2. In a separate bowl, whisk together the yogurt, honey, lemon juice, cinnamon, salt, and pepper.
  3. Add the yogurt mixture to the apple mixture and toss to combine.
  4. Stir in the walnuts and season with additional salt and pepper, if desired.
  5. Serve immediately or chill in the refrigerator for up to 2 hours before serving.
