Ingredients
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder

Directions
Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, salt, ginger and allspice.
In a large bowl, beat together the oil and sugar until light and creamy.
Beat in the eggs, one at a time, then stir in the vanilla.
Stir in the flour mixture alternately with the grated carrots, mixing just until incorporated.
Stir in the nuts, if using.
Divide the batter between the prepared pans and bake for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Cool the cakes in the pans for 10 minutes, then turn out onto wire racks to cool completely.
To make the frosting, beat the cream cheese and butter together until smooth. Beat in the confectioners' sugar and vanilla until light and fluffy.
Spread the frosting between the cooled layers and over the top and sides of the cake.
