Ingredients

  • 2 tablespoons olive oil
  • 2 pounds boneless, skinless chicken thighs
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 3 potatoes, peeled and cubed
  • 3 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 cup chicken broth
  • 1 cup frozen peas
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat the oil in a large pot over medium-high heat.
  2. Add the chicken and cook until golden brown, about 5 minutes per side.
  3. Add the onion, garlic, paprika, oregano, cumin, salt, and pepper. Cook, stirring, for 2 minutes.
  4. Add the potatoes, carrots, celery, and chicken broth. Bring to a boil, reduce the heat to low, and simmer, covered, for 15 minutes.
  5. Add the peas and parsley. Simmer for 5 minutes more, or until the vegetables are tender.
