Ingredients

  • 4 medium potatoes
  • 2 tablespoons butter
  • 1/2 cup grated cheddar cheese
  • 1/2 cup cooked, crumbled bacon
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400°F (205°C).
  2. Scrub potatoes, dry, and prick each potato several times with a fork. Bake for 45 minutes, or until potatoes are tender.
  3. Remove potatoes from oven and let cool. Cut each potato in half lengthwise.
  4. Scoop out insides of potatoes, leaving a 1/4-inch thick shell. Place potato shells on a baking sheet.
  5. In a medium bowl, mash together potato insides, butter, cheese, bacon, green onions, sour cream, salt, and pepper.
  6. Fill potato shells with potato mixture, and place back on baking sheet.
  7. Bake for 10 minutes, or until cheese is melted and potatoes are heated through.
  8. Serve warm.
