Chia-Seed Coconut and Raspberry French Toast Sticks

Ingredients

  • 2 cups of fresh raspberries
  • 2 tablespoons of chia seed
  • 1/2 cup of unsweetened shredded coconut
  • 1/4 cup of almond milk
  • 2 teaspoons of pure vanilla extract
  • 6 slices of whole wheat bread
  • 2 tablespoons of melted coconut oil

Directions

  1. In a medium bowl, mix the raspberries, chia seeds, coconut and almond milk and stir until combined.
  2. Add the vanilla extract and stir to combine.
  3. Cut the bread slices into sticks.
  4. Dip the sticks into the raspberry-coconut mixture.
  5. Heat the coconut oil in a large skillet over medium-high heat.
  6. Once the oil is hot, add the sticks to the pan and cook for about 2 minutes per side, or until golden brown.
  7. Serve with fresh raspberries and a drizzle of maple syrup.
