Ingredients

  • 2 tablespoons olive oil
  • 2 pounds beef stew meat, trimmed and cut into 1-inch cubes
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 2 teaspoons smoked paprika
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (14.5-ounce) can beef broth
  • 3 large carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 large potato, peeled and cubed
  • 1/4 cup frozen peas, thawed

Directions

  1. Heat the oil in a large Dutch oven over medium-high heat.
  2. Add the beef and cook, stirring occasionally, until browned, about 5 minutes.
  3. Add the onion, garlic, thyme, paprika, salt, pepper, and Worcestershire sauce and cook, stirring occasionally, until the onion is softened, about 5 minutes.
  4. Add the tomatoes, beef broth, carrots, celery, and potato and bring to a boil.
  5. Reduce the heat to low, cover, and simmer until the beef is tender, about 45 minutes.
  6. Stir in the peas and cook until heated through, about 5 minutes.
  7. Serve hot.
