2 pounds beef stew meat, trimmed and cut into 1-inch cubes
1 large onion, chopped
3 cloves garlic, minced
2 teaspoons dried thyme
2 teaspoons smoked paprika
2 teaspoons salt

1 teaspoon Worcestershire sauce
1 (14.5-ounce) can diced tomatoes
1 (14.5-ounce) can beef broth
3 large carrots, peeled and sliced
2 celery stalks, sliced
1 large potato, peeled and cubed
1/4 cup frozen peas, thawed
Directions
Heat the oil in a large Dutch oven over medium-high heat.
Add the beef and cook, stirring occasionally, until browned, about 5 minutes.
Add the onion, garlic, thyme, paprika, salt, pepper, and Worcestershire sauce and cook, stirring occasionally, until the onion is softened, about 5 minutes.
Add the tomatoes, beef broth, carrots, celery, and potato and bring to a boil.
Reduce the heat to low, cover, and simmer until the beef is tender, about 45 minutes.
Stir in the peas and cook until heated through, about 5 minutes.
