Ingredients
1 9-inch pie crust, unbaked
3 cups sliced, peeled peaches
1/2 cup sugar
2 tablespoons cornstarch
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 tablespoon butter
Directions
Preheat oven to 375 degrees F.
In a large bowl, combine peaches, sugar, cornstarch, nutmeg, cinnamon, and ginger and stir to coat.
Roll out the pie crust and place it in a 9-inch pie pan. Trim off any excess dough.
Pour the peach mixture into the pie crust and dot with butter.
Cover with another layer of pie crust, trim off any excess dough, and crimp the edges with a fork.
Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
Remove from oven and let cool before serving.
