Ingredients

  • 4 medium beets, peeled and cut into 1-inch cubes
  • 1/2 cup pecans, roughly chopped
  • 1/4 cup blue cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. Spread beets in a single layer on the baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the preheated oven for 20 minutes, stirring once halfway through.
  3. Meanwhile, in a small bowl, whisk together the apple cider vinegar, honey, and remaining olive oil to make the vinaigrette. Season with salt and pepper.
  4. In a large bowl, combine the roasted beets, pecans, and blue cheese. Pour the vinaigrette over the salad and toss to combine.
  5. Serve immediately.
