Ingredients

  • 1 cup uncooked long-grain white rice
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh cilantro

Directions

  1. In a medium saucepan, bring 2 cups of water to a boil over high heat.
  2. Add the rice to the boiling water and stir. Reduce the heat to low, cover the pot, and cook for 18 minutes.
  3. In a separate medium saucepan, heat the olive oil over medium heat. Add the black beans, cumin, chili powder, garlic powder, onion powder, salt, and pepper and stir to combine. Cook for 3 minutes, stirring occasionally.
  4. Add the cooked rice to the black bean mixture and stir to combine. Cook for an additional 3 minutes.
  5. Stir in the cilantro and remove from the heat. Serve warm.
