Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/4 cup water
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup fresh lemon juice

Directions

  1. Place the chicken breasts in the bottom of a slow cooker.
  2. In a medium bowl, mix together the onion, garlic, ginger, cumin, coriander, cinnamon, turmeric, cayenne pepper, and salt. Pour the mixture over the chicken.
  3. Pour in the water, raisins, almonds, cilantro, and lemon juice. Stir to combine.
  4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is cooked through and tender.
  5. Serve over rice or couscous, and garnish with additional cilantro and almonds, if desired.
