Ingredients
1 pound pork tenderloin, cut into thin slices
3 potatoes, peeled and diced
1 onion, diced
1/2 cup butter
3/4 cup all-purpose flour
3 cups milk
2 tablespoons Dijon mustard
1 teaspoon salt
1/2 teaspoon ground black pepper
Directions
In a large skillet, heat the butter over medium-high heat. Add the pork and cook until golden brown, about 5 minutes.
Add the potatoes and onion, and cook until the vegetables are tender, about 10 minutes.
Add the flour and stir until blended. Gradually add the milk and stir until the mixture is smooth.
Add the mustard, salt, and pepper, and bring to a boil. Reduce heat and simmer for 10 minutes, stirring occasionally.
Pour the mixture into a greased 9x13 inch baking dish. Bake at 350 degrees F for 20 minutes, or until the top is golden brown.
