Ingredients

  • 2 cups Basmati Rice
  • 2 tablespoons Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Ground Turmeric
  • 2 cups Vegetable Broth
  • 1 cup Frozen Peas

Directions

  1. In a large pot, heat the oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the cumin, coriander, and turmeric and cook for another minute.
  3. Add the rice and stir to coat with the spices. Add the broth and bring to a boil.
  4. Reduce the heat to low, cover, and simmer for 20 minutes.
  5. Stir in the peas and cook for another 5 minutes. Turn off the heat and let the rice sit for 5 minutes before serving.
