Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 cup chopped dried apricots
1 cup shredded cheddar cheese
Directions
Preheat oven to 350 degrees F (175 degrees C).
Grease and flour a 9x5 inch loaf pan.
In a medium bowl, mix together the flour, baking soda and salt; set aside.
In a large bowl, cream together the butter, granulated sugar and brown sugar until light and fluffy.
Beat in the eggs, one at a time, then stir in the vanilla.
Gradually stir the dry ingredients into the creamed mixture.
Fold in the apricots and cheese.
Pour batter into the prepared loaf pan.
Bake for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Allow to cool before slicing.
