Ingredients

  • 1 cup ricotta cheese
  • 1/2 cup mascarpone cheese
  • 1/2 cup confectioners' sugar
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons finely chopped pistachios
  • 1/4 cup miniature semisweet chocolate chips
  • 20 cannoli shells

Directions

  1. In a medium bowl, mix together the ricotta, mascarpone, confectioners' sugar, vanilla, cinnamon, and pistachios.
  2. Spoon the filling into a pastry bag fitted with a large star tip.
  3. Pipe the filling into the cannoli shells.
  4. Sprinkle the chocolate chips over the tops of the filled shells.
  5. Refrigerate for at least 2 hours before serving.
