8-10 lasagna noodles, cooked according to package instructions
Directions
Preheat oven to 375°F.
Heat olive oil in a large skillet over medium-high heat. Add onions and cook until softened, about 5 minutes.
Add ground beef and garlic and cook until beef is browned, about 8 minutes. Drain off any excess fat.
Add diced tomatoes, Italian seasoning, salt, and pepper and stir to combine. Simmer for 10 minutes.
Meanwhile, cook butternut squash in a pot of boiling water for 8 minutes or until tender. Drain and set aside.
In a 9x13 inch baking dish, layer half of the lasagna noodles, half of the beef mixture, half of the butternut squash, and half of the Parmesan and mozzarella cheeses. Repeat with remaining ingredients.
Cover baking dish with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes or until cheese is melted and bubbly.
Let cool for 10 minutes before serving.
