Ingredients

  • 2 lb. beef tenderloin, trimmed
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh oregano, chopped
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon sea salt

Directions

  1. In a medium bowl, mix together the olive oil, garlic, rosemary, thyme, oregano, black pepper, and sea salt.
  2. Place the trimmed beef tenderloin in a large resealable bag, and pour the herb-garlic-pepper mixture over the beef.
  3. Seal the bag and place it in the refrigerator to marinate for at least 30 minutes, or up to overnight.
  4. When ready to cook, preheat your grill to medium-high heat.
  5. Place the beef tenderloin on the grill and cook for 8-10 minutes per side, or until the internal temperature reaches 135°F for medium-rare. Use a meat thermometer to check for doneness.
  6. Remove the beef from the grill and let it rest for 10 minutes before slicing and serving.
