Easy Tuna Noodle Casserole
Ingredients
2 cups bran
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sugar
1/2 cup butter or margarine, melted
2 large eggs, beaten
1/2 cup milk
1/2 cup dried fruit, such as raisins, cranberries, or chopped apricots
Directions
Preheat oven to 375°F (190°C). Grease 12 muffin tins, or line with muffin papers.
In a large bowl, combine bran, flour, baking powder, baking soda, salt, and sugar. Mix well.
In a small bowl, combine melted butter, eggs, and milk. Add to bran mixture and mix until just combined.
Fold in the dried fruit.
Spoon the batter into the prepared muffin tins, filling each tin about 2/3 full.
Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Serve warm, with butter or margarine, if desired.
