Ingredients

  • 2 turkey breasts
  • 2 dried ancho chiles
  • 2 dried guajillo chiles
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 cinnamon stick
  • 1/4 cup almonds
  • 1/4 cup pumpkin seeds
  • 1/4 cup sesame seeds
  • 1/4 cup raisins
  • 2 tomatoes, roasted
  • 2 oz Mexican chocolate
  • 2 poblano peppers, roasted and peeled
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Directions

  1. Prepare the dried chiles by removing the stems and seeds, then soaking them in hot water for 15 minutes.
  2. In a large pot, heat the oil over medium heat and brown the turkey breasts on both sides. Remove and set aside.
  3. In the same pot, sauté the onion, garlic, and cinnamon stick until fragrant.
  4. Add the almonds, pumpkin seeds, sesame seeds, raisins, roasted tomatoes, and soaked chiles. Cook for 5 minutes.
  5. Transfer the mixture to a blender, add the Mexican chocolate, and blend until smooth.
  6. Return the sauce to the pot, add the turkey breasts, and simmer for 45 minutes or until the turkey is cooked through.
  7. Add the roasted poblano peppers and cook for an additional 5 minutes.
  8. Season with salt and pepper to taste.
  9. Serve the turkey mole poblano with rice or tortillas.
