Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cups cooked or canned white beans, drained and rinsed
  • 2 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon sea salt, to taste
  • 1/4 teaspoon ground black pepper, to taste
  • 1 bunch kale, chopped
  • 1 lemon, juiced
  • Optional: red pepper flakes, to taste

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is soft and translucent, about 5 minutes.
  2. Add the beans, vegetable broth, oregano, thyme, salt, and pepper. Bring to a boil, reduce heat and simmer for 10 minutes.
  3. Add the kale and simmer for 5 minutes.
  4. Stir in the lemon juice and season with more salt and pepper, to taste. Serve warm or at room temperature.
