Ingredients
1 tablespoon olive oil
1 large onion, diced
3 cloves garlic, minced
2 cups cooked or canned white beans, drained and rinsed
2 cups vegetable broth
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon sea salt, to taste
1/4 teaspoon ground black pepper, to taste
1 bunch kale, chopped
1 lemon, juiced
Optional: red pepper flakes, to taste
Directions
In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is soft and translucent, about 5 minutes.
Add the beans, vegetable broth, oregano, thyme, salt, and pepper. Bring to a boil, reduce heat and simmer for 10 minutes.
Add the kale and simmer for 5 minutes.
Stir in the lemon juice and season with more salt and pepper, to taste. Serve warm or at room temperature.
