Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 small onion, diced
  • 1 large carrot, diced
  • 2 cloves garlic, minced
  • 1 pound lean ground beef
  • 1 28-ounce can diced tomatoes
  • 1 6-ounce can tomato paste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion, carrot, and garlic and sauté for about 5 minutes, or until the vegetables are softened.
  3. Add the ground beef and cook for about 8 minutes, or until the beef is no longer pink.
  4. Stir in the diced tomatoes, tomato paste, oregano, basil, thyme, and red pepper flakes (if using).
  5. Bring the mixture to a boil, then reduce the heat to low and simmer, stirring occasionally, for about 20 minutes.
  6. Season with salt and pepper, to taste.
  7. Serve over cooked pasta.
