Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 small onion, diced
- 1 large carrot, diced
- 2 cloves garlic, minced
- 1 pound lean ground beef
- 1 28-ounce can diced tomatoes
- 1 6-ounce can tomato paste
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
Directions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion, carrot, and garlic and sauté for about 5 minutes, or until the vegetables are softened.
- Add the ground beef and cook for about 8 minutes, or until the beef is no longer pink.
- Stir in the diced tomatoes, tomato paste, oregano, basil, thyme, and red pepper flakes (if using).
- Bring the mixture to a boil, then reduce the heat to low and simmer, stirring occasionally, for about 20 minutes.
- Season with salt and pepper, to taste.
- Serve over cooked pasta.
