In a medium saucepan, combine the sugar, cornstarch, cinnamon, salt and butter. Cook over medium heat, stirring constantly, until the mixture thickens and boils.
Stir in the cherries and cherry juice, and continue to cook for 1 minute.
Remove from heat and let cool slightly.
In a large bowl, layer the cake cubes, cherry mixture, whipped cream, and coconut.
Serve immediately or refrigerate until ready to serve.
