Ingredients
- 1/2 cup granulated sugar
- 1 teaspoon cornstarch
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 tablespoons butter
- 1/2 cup chopped maraschino cherries, drained
- 2 tablespoons maraschino cherry juice
- 1 9-inch prepared chocolate cake, cut into cubes
- 1 cup heavy cream, whipped
- 1/2 cup flaked coconut
Directions
- In a medium saucepan, combine the sugar, cornstarch, cinnamon, salt and butter. Cook over medium heat, stirring constantly, until the mixture thickens and boils.
- Stir in the cherries and cherry juice, and continue to cook for 1 minute.
- Remove from heat and let cool slightly.
- In a large bowl, layer the cake cubes, cherry mixture, whipped cream, and coconut.
- Serve immediately or refrigerate until ready to serve.
