Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 teaspoons curry powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 head cauliflower, cut into florets
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 small onion, cut into wedges
  • 1/2 cup frozen peas

Directions

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. In a small bowl, stir together olive oil, garlic, curry powder, salt, and pepper.
  3. In a large bowl, combine cauliflower, red bell pepper, yellow bell pepper, onion, and frozen peas. Pour oil mixture over vegetables and toss until evenly coated.
  4. Spread vegetables in a single layer onto a baking sheet.
  5. Bake in preheated oven for 15 minutes. Stir vegetables and bake until tender, about 5 minutes more.
