Ingredients

  • 1 cup cooked white rice
  • 1/2 cup canned artichoke hearts, drained and chopped
  • 1/4 cup diced red onion
  • 1/4 cup diced bell pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Directions

  1. Combine the cooked rice, artichoke hearts, red onion, bell pepper, and parsley in a large bowl.
  2. In a separate bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the salad and mix until everything is evenly coated.
