Ingredients

  • 2 cans black beans, drained and rinsed
  • 1 can diced tomatoes, drained
  • 1 red bell pepper, diced
  • 1/2 cup frozen corn
  • 1/2 cup onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt and pepper to taste
  • 6 corn tortillas, cut into 1-inch strips
  • 1 cup shredded cheddar cheese

Directions

  1. Preheat oven to 350 degrees F.
  2. Combine black beans, tomatoes, bell pepper, corn, onion, garlic powder, chili powder, cumin, salt, and pepper in a large bowl.
  3. Spread half of the bean mixture in the bottom of an 8x8-inch baking dish.
  4. Layer half of the tortilla strips over the bean mixture.
  5. Spread the remaining bean mixture over the tortilla strips.
  6. Layer the remaining tortilla strips over the bean mixture.
  7. Sprinkle the cheese over the top.
  8. Bake in preheated oven for 30 minutes, or until cheese is melted and bubbly.
