Ingredients
- 1 can (14-ounce) sauerkraut, drained
- 1 large onion, chopped
- 1 large bell pepper, chopped
- 1 large carrot, chopped
- 2 cloves garlic, minced
- 1 teaspoon caraway seeds
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1/2 pound smoked sausage, sliced
- 1/4 cup white wine
- 1/4 cup chicken stock
Directions
- In a large pot over medium heat, heat the oil.
- Add the onions, bell pepper, carrot, garlic, caraway seeds, and thyme. Season with salt and pepper, to taste.
- Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
- Add the sauerkraut and smoked sausage and cook for an additional 5 minutes.
- Pour in the wine and chicken stock and bring the mixture to a boil.
- Reduce the heat to low and simmer, stirring occasionally, for 15 minutes.
- Serve warm.
