Ingredients
- 2 tablespoons butter
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 bay leaves
- 1 teaspoon dried thyme
- 2 potatoes, peeled and diced
- 2 cups cooked ham, diced
- Salt and pepper to taste
Directions
- Melt butter in a large pot over medium-high heat.
- Add onion, carrots, celery, and garlic and cook until vegetables are softened, about 5 minutes.
- Add chicken broth, bay leaves, and thyme and bring to a boil.
- Add potatoes and cook until tender, about 10 minutes.
- Stir in the ham and season with salt and pepper to taste.
- Reduce heat and simmer for 10 minutes.
- Serve hot.
