Ingredients
- 1 lb. black beans, rinsed and soaked overnight
- 2 cups water
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon oregano
- Salt and pepper, to taste
- 1/2 pound chorizo, cut into small pieces
- 1/2 pound bacon, diced
- 1/2 pound cured ham, cut into small pieces
- 1/2 pound smoked sausage, cut into small pieces
- 1/2 pound pork ribs, cut into small pieces
- 2 tablespoons tomato paste
- 2 tablespoons red wine vinegar
Directions
- In a large pot, combine the beans, water, onion, garlic, bay leaf, smoked paprika, cumin, and oregano. Bring to a boil and reduce heat to low. Simmer for about 20 minutes, or until beans are tender.
- Add the chorizo, bacon, ham, sausage, and pork ribs to the pot and simmer for an additional 10 minutes.
- Stir in the tomato paste and vinegar and simmer for an additional 5 minutes.
- Season to taste with salt and pepper and serve hot.
