Ingredients

  • 1 lb. black beans, rinsed and soaked overnight
  • 2 cups water
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • Salt and pepper, to taste
  • 1/2 pound chorizo, cut into small pieces
  • 1/2 pound bacon, diced
  • 1/2 pound cured ham, cut into small pieces
  • 1/2 pound smoked sausage, cut into small pieces
  • 1/2 pound pork ribs, cut into small pieces
  • 2 tablespoons tomato paste
  • 2 tablespoons red wine vinegar

Directions

  1. In a large pot, combine the beans, water, onion, garlic, bay leaf, smoked paprika, cumin, and oregano. Bring to a boil and reduce heat to low. Simmer for about 20 minutes, or until beans are tender.
  2. Add the chorizo, bacon, ham, sausage, and pork ribs to the pot and simmer for an additional 10 minutes.
  3. Stir in the tomato paste and vinegar and simmer for an additional 5 minutes.
  4. Season to taste with salt and pepper and serve hot.
