Cook the white rice according to package instructions.
Heat a large skillet over medium heat. Add the ground beef and onion and cook until the beef is no longer pink, about 5 minutes.
Add the carrot, bell pepper, mushrooms, garlic, gochujang, sesame oil, and soy sauce. Cook for another 5 minutes, stirring occasionally.
Transfer the cooked beef and vegetables to a bowl. Set aside.
In the same skillet, fry the egg sunny side up.
To assemble the bibimbap, place 1 cup of cooked rice in each bowl and top with the beef and vegetables. Place the fried egg on top and sprinkle with sesame seeds.
