Ingredients

  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 2 carrots, diced
  • 2 stalks of celery, diced
  • 1 teaspoon of dried thyme
  • 6 cups of chicken broth
  • 1 pound of boneless, skinless chicken breasts, cut into cubes
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of salt
  • 1 cup of chopped parsley

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  2. Add the thyme, chicken broth, chicken, black pepper, and salt to the pot. Bring the soup to a boil, then reduce the heat to low and simmer for 20 minutes.
