In a shallow bowl, mix together the flour, garlic powder, paprika, salt, pepper and cayenne (if using).
In a separate shallow bowl, pour the buttermilk.
Dip each onion ring into the buttermilk, then into the flour mixture. Make sure to evenly coat each ring.
Heat the oil in a large skillet over medium-high heat. When the oil is hot, carefully place the rings in the skillet and fry for 2-3 minutes. Turn the rings and fry for an additional 2-3 minutes, or until golden brown and crispy.
Remove from the heat and place on a paper towel-lined plate to drain.
Serve warm with your favorite condiments.
