Ingredients
1 pound fresh linguine
2 tablespoons olive oil
3 cloves garlic, minced
2 cups zucchini, diced
1/2 cup vegetable stock
1/2 cup heavy cream
1/4 cup freshly chopped parsley
Salt and pepper to taste
Directions
Cook the linguine according to package directions. Drain and reserve.
Heat the olive oil in a large skillet over medium heat. Add the garlic and zucchini, and sauté for 4-5 minutes, or until the vegetables are softened.
Add the vegetable stock and cream, and simmer for 2-3 minutes, or until the sauce is slightly thickened.
Add the cooked linguine and parsley to the skillet, and toss to combine.
Season with salt and pepper, to taste, and serve.
