Ingredients
- 1 package extra-firm tofu, drained and cut into cubes
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 4 large whole wheat tortillas
- 1 cup fresh spinach leaves, chopped
- 1/4 cup feta cheese, crumbled (optional)
Directions
- Preheat oven to 350 degrees F.
- In a large bowl, combine the tofu, olive oil, garlic, oregano, basil, salt, and pepper. Mix until all ingredients are evenly coated.
- Spread the tofu mixture on a baking sheet and bake for 20 minutes, stirring once halfway through.
- Meanwhile, warm the tortillas in a large skillet over medium heat for 1-2 minutes per side.
- Remove the tofu from the oven and set aside.
- To assemble the wraps, lay a tortilla flat on a plate. Add a layer of spinach, followed by a layer of tofu. Sprinkle with feta cheese, if using.
- Fold the sides of the tortilla in and roll it up. Serve warm.
