Ingredients

  • 1 package extra-firm tofu, drained and cut into cubes
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 4 large whole wheat tortillas
  • 1 cup fresh spinach leaves, chopped
  • 1/4 cup feta cheese, crumbled (optional)

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine the tofu, olive oil, garlic, oregano, basil, salt, and pepper. Mix until all ingredients are evenly coated.
  3. Spread the tofu mixture on a baking sheet and bake for 20 minutes, stirring once halfway through.
  4. Meanwhile, warm the tortillas in a large skillet over medium heat for 1-2 minutes per side.
  5. Remove the tofu from the oven and set aside.
  6. To assemble the wraps, lay a tortilla flat on a plate. Add a layer of spinach, followed by a layer of tofu. Sprinkle with feta cheese, if using.
  7. Fold the sides of the tortilla in and roll it up. Serve warm.
