Ingredients
1 package extra-firm tofu, drained and cut into cubes
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
4 large whole wheat tortillas
1 cup fresh spinach leaves, chopped
1/4 cup feta cheese, crumbled (optional)
Directions
Preheat oven to 350 degrees F.
In a large bowl, combine the tofu, olive oil, garlic, oregano, basil, salt, and pepper. Mix until all ingredients are evenly coated.
Spread the tofu mixture on a baking sheet and bake for 20 minutes, stirring once halfway through.
Meanwhile, warm the tortillas in a large skillet over medium heat for 1-2 minutes per side.
Remove the tofu from the oven and set aside.
To assemble the wraps, lay a tortilla flat on a plate. Add a layer of spinach, followed by a layer of tofu. Sprinkle with feta cheese, if using.
Fold the sides of the tortilla in and roll it up. Serve warm.
