Ingredients

  • 2 pounds beef bones or oxtails
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 onion, peeled and chopped
  • 2 cloves garlic, peeled and minced
  • 1 teaspoon black peppercorns
  • 2 bay leaves
  • 4 quarts cold water

Directions

  1. In a large stockpot, combine all of the ingredients.
  2. Bring to a boil over high heat, then reduce to a simmer.
  3. Simmer for two hours, skimming any foam or impurities from the surface.
  4. Strain the stock through a fine-mesh sieve, discarding the solids.
  5. Allow the stock to cool completely before storing.
