Ingredients
2 pounds beef bones or oxtails
2 carrots, peeled and chopped
2 celery stalks, chopped

4 quarts cold water
Directions
In a large stockpot, combine all of the ingredients.

Strain the stock through a fine-mesh sieve, discarding the solids.
Allow the stock to cool completely before storing.
