2 medium squash, such as acorn, cut into 1-inch cubes
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 cup pure maple syrup
2 tablespoons unsalted butter
1/4 cup chopped toasted pecans
Directions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine the squash cubes, olive oil, salt, and pepper. Toss to coat.
Spread the squash cubes in a single layer on the baking sheet. Roast for 20 minutes, stirring halfway through.
Meanwhile, in a small saucepan, combine the maple syrup and butter. Cook over medium heat, stirring occasionally, until the butter is melted and the mixture is bubbly. Remove from the heat and stir in the pecans.
When the squash is done, remove from the oven and pour the maple syrup mixture over the squash cubes. Stir to coat.
Return the squash to the oven and roast for an additional 10 minutes, stirring halfway through.
Serve warm.
