Ingredients

  • 4 large eggs
  • 3 tablespoons mayonnaise
  • 1 tablespoon dijon mustard
  • 2 teaspoons freshly squeezed lemon juice
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 stalks celery, finely chopped

Directions

  1. Place eggs in a medium saucepan and cover with cold water.
  2. Bring to a boil over high heat, then reduce heat to low and simmer for 12 minutes.
  3. Remove from heat and drain the hot water. Place the eggs in a bowl of cold water to cool.
  4. Once the eggs are cool, remove the shells and place the eggs in a medium bowl.
  5. Mash the eggs with a fork until they are finely chopped.
  6. Add mayonnaise, dijon mustard, lemon juice, garlic powder, salt, and pepper to the bowl and mix until combined.
  7. Stir in the chopped celery.
  8. Serve the egg salad with your favorite bread or crackers.
