Preheat oven to 425°F. Line a baking sheet with parchment paper.
Scoop the ice cream into a 1-quart bowl and place it in the freezer for 30 minutes.
In a large bowl, combine the egg whites, sugar, vanilla extract, and salt. Beat with a hand mixer on high speed until stiff peaks form, about 4 minutes.
Remove the ice cream from the freezer and quickly spread the meringue over the top and sides. Sprinkle the almonds on top, if desired. Place the bowl on the prepared baking sheet.
Bake for 5 minutes, or until the meringue is lightly browned. Serve immediately.
